What is seasoning, exactly?

SG Emmett & Son's cake tins are crafted from tin-plated steel and require seasoning to prevent rust, thus extending their lifespan, and to develop a natural non-stick surface.

Seasoning is the process of creating a natural non-stick surface on your tin by building up thin layers of oil and bonding them to the metal with heat. When heated to a high temperature, the oil undergoes a chemical reaction called polymerisation, forming a hard, protective layer on the tin.

These layers build up into a durable, non-toxic, and highly effective non-stick coating — without the need for synthetic chemicals. 

How to season your tins?
  1. Apply oil: Lightly coat the inside and outside of your tin with rice bran oil (or other high-smoke-point oils such as grape-seed, canola or flaxseed).

  2. Wipe off excess: Use a paper towel to wipe away excess oil, leaving only a very thin, even layer. Too much oil can create a sticky finish.

  3. Place in oven: Put the tin upside down in a cold oven. Then set the oven to 230-260°C. Once at temperature bake for 20 minutes.

  4. Cool completely: Turn off the oven and let the tin cool inside the oven until completely cool.

  5. Repeat: For best results, repeat the process 3 or more times to build up a strong, non-stick layer.

Cleaning

To ensure the longevity and proper care of your item, follow these care instructions:

  • Hand wash with warm water and mild soap or detergent. Don't use a dishwasher
  • Avoid harsh abrasive cleaners and scouring pads
  • Do not soak for extended periods
  • After washing, dry thoroughly in a warm oven before storing.
